♥ Tiramisu receipe

Had decided to make a Tiramisu as a birthday cake for Pak so had tried out once and it succeed as approve by the Guinea pigs and they are LSB, Mau, Toby, Flourance, Chi ho, Chin Hock and myself. Should be enough judges to confirm its nice bah hohoho.

Initially I've got 2 recipes from Internet but the problem encounter was the first recipe requires a lot of alcohol which i do not have. Outside are selling one bottle of Baileys or Kahlua for at least $60++, so if i were to make this cake it will cost me at least $100 which is not within my budget. Therefore I've amend some of the ingredients to make it my own recipe. But got to thanks Gay buddy for giving me some of his Kahlua.

Tiramisu

Ingredients:

1) 28 lady fingers
for 8 x 8 inch try pan


2) Milk


3) Coffee


4) Cocoa Powder


5) Cream Cheese


6) Coffee Alcohol Kahlua


7) Liquid whipping cream


8) Vanilla essence


9) Sugar


Syrup:
4 tablespoon milk (full cream milk will be better)
1 cup black coffee
2 tablespoon sugar (melt it with the black coffee)
1 teaspoon vanilla
2 - 3 Tablespoons coffee liquor

Cream:
250 gr. mascarpone cheese (I use Philadelphia Cream Cheese)
250 gr. liquid whipping cream
60 gr. sugar
1 teaspoon vanilla
4 tablespoon or 30 ml liquor… cocoa or coffee

Steps for Syrup:
mix the ingredients into a big bowl


Steps for Cream:
Beat very well the whip cream + 1/2 sugar until sugar is dissolved, make sure you don’t mix it too much (whip cream can turn to curds if over beaten), and last… beat very well the cheese + 1/2 sugar until is dissolved. Combine all… add vanilla and the liquor… cacao or coffee.

Assemble the cake:
1) Cut the tip of the ladyfinger to fit into the 8 x 8 inch pan

2)Place a layer of lady fingers on the bottom of the baking pan, soak the lady fingers with syrup but to make it more evenly soak i use brush to brush the lady fingers.

3) Take a tea strainer and powder with cocoa (about 1 full teaspoon-if needed more add as desire) all over the lady fingers.

4) Take 1/2 of the cream and place it in the middle of the cake. The cream tends to stick to the spoon and get loose because of the cocoa powder. What I do, is push the cream towards the sides of the pan, until it touches the walls. The cream must touch the walls all around, and make sure the cream is spread well and no holes are communicating with the lady fingers bellow. We don’t want any liquid to go to the layer bellow.

5) Place next layer of lady fingers over the cream, sprinkle the rest of the syrup, sprinkle with cocoa and place the rest of the cream on top of everything. Level well and sprinkle plenty with cocoa.

5)Refrigerate over night.



It was a succeed cake for his birthday and as comment by Pak and his parents its very nice. They gave 8.5/10 for this cake.
